Ingredients
Serves: 4 portions
Base:
- 75g Dark chocolate – aim for 60% or aboveÂ
- 4tbsp natural yogurtÂ
- 2 large egg whitesÂ
- 2tsp granulated sugarÂ
- 350g mixed fruitÂ
Optional:
- 1tbsp nuts for garnishÂ
- 1tsp dessicated coconut for garnishÂ
- 1tbsp cocoa powder for a deeper chocolate flavourÂ
- 1tsp ginger, mint, or cinnamon to infuse the mousse.Â
Method
- Prepare the mousse –
- melt the chocolate in a heat proof bowl either over a pot of boiling water or in the microwave, stirring every 20-30 seconds until it’s completely melted. Leave to cool for 5-10 minutes.Â
- Mix in the yogurt. If using, add the spices and cocoa powder at this point.Â
- Beat the egg whites until stiff peaks form then add the sugar and repeat.Â
- Fold 1tbsp of the egg whites into the yogurt mixture to loosen it up. Then fold in the rest, ensuring to trap as much air as possible. Continue until fully combined.Â
- Prepare the fruit –
- Split your selection of fruit between 4 glasses, ramekins, or small bowls.Â
- Layer the mouse on top.Â
- Leave to set for a minimum of 1 hour.Â
- Serve – Serve with garnish of choice. Will keep in the fridge for up to 4-5 days.Â
