Ingredients
Serves: 6 portions
- 1 can (400g) chickpeas, drained and rinsedÂ
- 3 tbsp tahiniÂ
- 1 lemon, juiced and zestedÂ
- 2 garlic cloves, mincedÂ
- 2 tablespoons olive oilÂ
- 1/2 teaspoon ground cuminÂ
- 1/4 teaspoon saltÂ
- 1/4 teaspoon paprikaÂ
- Water, as neededÂ
Optional:
- 200g cooked and roughly chopped beetroot Â
Method
- In a food processor or blender, combine the chickpeas, tahini, lemon juice and zest, garlic, olive oil, cumin, salt, and paprika. Process until smooth. If you are adding beetroot, add it to the processor or blender with the other ingredientsÂ
- If the hummus is too thick, add water a tablespoon at a time until it reaches the desired consistency.Â
- Taste and adjust the seasoning as necessary.Â
- Transfer the hummus to a bowl and drizzle with a little more olive oil and a sprinkle of paprika, if desired.Â
- Serve with wholemeal pita bread, oat cakes or your favourite veggies for dipping.
